Pierre Gagnaire, who visits the restaurant three times a year, is a wizard of innovative French gastronomy, and one of the most original and artistic chefs in the world today. Although his food is often described as ‘modern French’, his style is deeply rooted in the French cooking tradition which results in dishes that are exquisitely presented while being both easy to understand and unpretentious.

At just 29 years old, the Brittany native has been named the new Chef de Cuisine at two starred Michelin Pierre.
Chef Jacky is set to lead the award winning team, succeeding from his mentor Chef Jean-Denis Le Bras, to continue to bring guests contrasting flavours, use of seasonal ingredients, and creative as well as innovative dishes from one of Hong Kong’s favourite chefs.
Chef Jacky has extensive experience working with Pierre Gagnaire including at the much-loved three Michelin-starred Restaurant Pierre Gagnaire in Paris from 2008 to 2012 before moving to Pierre in Hong Kong in 2012 as Sous Chef. Here, he has worked side by side with Chef Jean-Denis and is the perfect choice to lead Pierre’s culinary team.
Inspired by his love of the arts, Chef Jacky frequents museums and art galleries around the world. It is through the love of art that he has learnt to funnel Pierre Gagnaire’s artistic design and creative dishes to attract guests to Pierre time and time again.
Offering the ultimate in exclusivity, Pierre’s stylish private dining room can seat up to 14 diners around a long table. Featuring a magnificent backlit Oriental ceiling and soft low lighting, a window stretches along the back wall opening up views over the city.
